Honey is made from the nectar of flowers – the watery sweet juice that plants produce to attract bees for pollination. An enzyme called invertase is produced by the bees and added to the nectar to invert the sucrose, or bad sugar, into about 90% glucose and fructose which are both simple sugars, better for the bees and better for humans. In addition it contains about 10% other specific minerals, vitamins and specific sugars that are unique only to Pure Honey. Honey is stored by the bees to meet their carbohydrate requirements throughout the long winters and periods without nectar production. Because of these unique properties honey is even recommended as safe for diabetics to consume in moderation without spiking blood sugars. See here for more information.|
By moving our bees to various geographical regions at specific parts of the season, we are often able to isolate specific floral sources of honey and extract them separately for your enjoyment. We produce the Okanagan Wildflower and Okanagan Multi Floral honeys with our bees close to home and then move them to the Fraser Valley in BC's Lower Mainland to produce the blueberry, cranberry, raspberry and blackberry blossom honey.
There can be as many different types of honey as there are species of nectar producing flowers.
Honey is recommended as a topical treatment for numerous skin ailments and when taken internally is a great clean energy boost and is an excellent all round health tonic for protecting our immune systems. Honey can be helpful for people having trouble getting to sleep at night. By taking a tablespoon of honey in warm water approximately 20 minutes before bed, people fall asleep faster and receive a better rest. If you ever burn yourself around the kitchen or the stove, try applying honey to the burn, wrapping it in a gauze or cloth and leaving it on for as long as possible, to reduce the severity of the burn, to speed healing and reduce the risk of infection and scarring.
The Honey Bee
Honeybees are the only insects that produce food for humans and are one of the most beneficial insects in the world. Not only do they give us honey, pollen, propolis, royal jelly and beeswax, but they pollinate the flowers they visit and are responsible for pollinating billions of dollars worth of fruit and vegetable crops every year.
A healthy bee hive can contain between 40 & 100,000 worker bees but only one Queen bee. The Queen bee can lay up to 2000 eggs or 3 times her own body weight per day. A worker bee can produce about one teaspoon of honey in her six week life span and travels an average of 1600 round trips of up to 6 miles each to collect it.

*Denotes a creamed honey. Creamed honey, also known as Ice Honey or Churned Honey, is simply the solid (frozen) form of honey.
Honey freezes at 29°C, and therefore all honey will eventually crystallize at room temperature. This can be reversed by warming the honey above 30°C.
To get nice soft, smooth crystals, the honey is "seeded" with some already creamed honey, cooled it to around 10°C, and slowly churned to breakdown any large crystals.
All new crystals copy the previous, and so by seeding the honey we ensure the new crystals will be of equal quality.
Comb Honey, aka honey comb, or honey in the comb is pure 100% honey in its most natural state, (exactly how the bees store the honey in pure soft beeswax totally untouched by human hands, machines or any sort of processing.) Planet Bee comb honey is produced in the Rocky Mountain foothills from sources including clover and alfalfa. Most people eat the wax, (it's good for you!) or chew like gum. Comb honey could be beneficial for allergies and hay fever and may be the very best when produced locally!

We have been in the store a few times and have tested the different honeys and always end up buying our favourite the Okanagan Gold. We could pick it out with our eyes closed! We have a few runner ups also but prefer Okanagan Gold for our tea and the occasional baking.
